Banana Choc Chip Muffins

Who doesn’t love a good Banana Choc Chip muffin? I love making these for the kids’ lunch boxes, picnics after play dates and even to enjoy with friends / family over a cuppa. Being a classic muffin recipe, I know there are heaps of variations out there. This recipe makes for a ‘springy’ and fluffy muffin that’s quick and easy to whip up.

Prep and Cooking Time – 25 minutes |  Serves – 12 muffins

INGREDIENTS

– 250g plain flour
– 100g sugar
– 1 teaspoon bicarb soda
– 1 teaspoon baking powder
– 1/4 teaspoon salt
– 100g butter
– 2 ripened bananas
– 1 egg
– 20g milk
– 80g dark chocolate chips
METHOD

Preheat oven to 200oC. Grease muffin pan or insert cupcake cases.

Add all ingredients, except for the choc chips, and mix 30 sec / speed 6 

Add the choc chips and mix in 10 sec / reverse / speed 4

Pour mixture into the muffin pan or cases up to 3/4 full. Bake for 15-20 minutes or until a skewer comes out clean from the muffin.

Leave to cool on a wire rack before enjoying.

    Awesome recipe so light and fluffy I doubled the recipe except the sugar very successfully and the family scored 10/10 if doubling make sure your butter is very soft.

    Very yummy! Left out the sugar, upped bananas to 3 & added 100g dark choc chips. Tried one while still warm, not overly sweet & very light. Will definitely make again, so quick & easy! ?
