Ice Cream Dessert Pizza

Since owning a Thermomix, our family has been making lots of pizza as it is so easy to make. With our current pizza obsession, I received a random request from my kids – “Mummy, can we make ice cream pizza?” So as a dutiful mum does, I turned this cooking challenge into a school holiday project for me and the kids. The beauty of this recipe is that it is flexible to accommodate your sweet taste; I think next time we might try a fruit topping but keep the chocolate. Enjoy 🙂

Prep & Cooking Time – 30 minutes + chilling time | Serves – 4-6

INGREDIENTS 

For the Base…
– 80g raw sugar
– 200g choc chips
– 80g butter, soft
– 1 teaspoon vanilla essence
– 1 egg
– 110g plain flour
– 25g cocoa powder
– ½ teaspoon baking soda
– ¼ teaspoon salt
For the Topping (quantities as desired)…
– Chocolate spread (Nutino or Nutella)
– Vanilla Icecream
– Smarties

 

METHOD

Pre-heat oven to 180?C and grease a circular springform pan.

Mill sugar 10 sec / speed 9 then scrap the sides of the bowl.

Break chocolate into pieces 10 sec / speed 9.

Add butter and melt chocolate 2½ min / 50°C / speed 2.

Add vanilla essence and egg. Combine ingredients 5 sec / speed 5.

Add flour, cocoa, baking soda and salt. Mix all the ingredients together thoroughly 30 sec / speed 5.

Pour pizza base batter into your pre-greased pan and bake for 15 minutes. Once cooked, take out and leave to completely cool.

Once cooled, start your topping. For this recipe:

– Used Nutino hazelnut spread to create the ‘pizza sauce’.
– Smeared vanilla ice cream on top of the hazelnut spread.
– Dotted the top with Smarties.
