Cheesy Macaroni Pots with Bacon & Broccoli

I came across this recipe as I browse through the many food magazines that I purchase. What I love about this recipe is that it uses everyday ingredients and is quite basic, which means you are free to add more vegetables to make this an even heartier meal. Further, this classic recipe is something the whole family can enjoy – I know mine did.

Cook + Prep Time – 30 minutes | Serves – 8

INGREDIENTS

– 250g macaroni pasta
– 1 broccoli head, cut into florets and par boiled
– 4 bacon rashers, finely chopped
– 50g butter
– 1 Tablespoon plain flour
– 500mL milk
– 2 cups Tasty grated cheese
– 20g fresh bread crumbs
– Olive oil spray

METHOD

Step 1. Cook pasta according to packet instructions. Once cooked, set aside.

Step 2. Cook bacon in a saucepan on medium high heat until lightly browned. Transfer to a bowl once cooked.

Step 3. Add butter to the pan and cook until the butter melts. Stir in the flour until the mixture turns thick, approximately 2 minutes. Turn the heat down to the lowest setting.

Step 4. Return the heat to medium high and whisk in the milk until you get a smooth, thick consistency, approximately 5 minutes. Remove from heat.

Step 5. Stir in 1 1/cups of cheese into the milk mixture until cheese is melted and the mixture is smooth again.

Step 6. Pour the mixture over the pasta then add the bacon and broccoli. Stir well to ensure all the macaroni pasta is covered in the mixture.

Step 7. Grease the ramekins using the olive oil spray. Divide the macaroni mixture between the ramekins, then sprinkle with bread crumbs and the remaining cheese. Cook under the grill until the cheese melts and the bread crumbs are crisp.
