Caldaretta is a tomato-based beef stew which has Spanish influences. Although every family has their own version using their favourite meats (chicken, goat and offal cuts like liver) and vegetables, this is the version that I grew up with here in Australia.<\/p>\n<p>I learned to make this on the stove top without using a packet mix and it was tedious to constantly watch over it, especially when it came to the gravy. This is very much a cook and walk away recipe which I hope your family will enjoy as much as mine do \ud83d\ude42<\/p>\n<p>Please note this recipe has been made for the TM5 so if making in the TM31, please be mindful of maximum quantities.<\/p>\n<p><a href=\"https:\/\/dev.lalaskitchen.net\/wp-content\/uploads\/2016\/05\/branded.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-1244 size-large\" src=\"http:\/\/www.mylalalife.com\/wp-content\/uploads\/2016\/05\/branded-1024x680.jpg\" alt=\"branded\" width=\"900\" height=\"598\" \/><\/a><\/p>\n<p><strong>Prep and Cooking Time\u00a0<\/strong>&#8211; 1 hour &amp; 20 minutes |\u00a0<strong>Serves\u00a0<\/strong>&#8211; 4 to 6<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<p>\u2013\u00a01 brown onion (100g)<br \/>\n\u2013\u00a02x garlic cloves<br \/>\n\u2013\u00a030g olive oil<br \/>\n\u2013 500g chuck steak, diced (3cm pieces)<br \/>\n\u2013\u00a030g chicken stock concentrate<br \/>\n\u2013 175g passata<br \/>\n\u2013\u00a0325g water<br \/>\n\u2013\u00a0150g carrots, cut into rounds (1cm thick)<br \/>\n\u2013 300g potato, cut into chunks<br \/>\n\u2013\u00a03 dried bay leaves<br \/>\n\u2013\u00a020g fish sauce<br \/>\n\u2013\u00a020g soy sauce<br \/>\n\u2013 1\/4 teaspoon black pepper<br \/>\n\u2013\u00a0100g tomato paste<br \/>\n\u2013\u00a0100g frozen peas<br \/>\n\u2013\u00a0100g capsicum, cut in strips<\/p>\n<p><strong>METHOD<\/strong><\/p>\n<p>Chop onion and garlic\u00a0<strong>3 sec \/ speed 7 \\ MC on<\/strong>. Scrape the sides of the bowl.<\/p>\n<p>Add oil, chicken stock concentrate and diced beef. Saute for <strong>4 mins \/ 120oC \/ reverse \/ speed 1 \/ MC on<\/strong>.<\/p>\n<p>Add passata, water, carrots, potatoes, dried bay leaves, fish sauce, soy sauce and pepper into the mixing bowl. Using your spatula mix the contents of the bowl to loosen all the ingredients. Commence cooking <strong>45 mins \/ 80oC \/ reverse \/ speed soft \/ MC on<\/strong>.<\/p>\n<p>Add tomato paste, capsicum and frozen peas to the stew. Continue cooking\u00a0<strong>10 mins \/ Varoma \/ reverse \/ speed soft \/ MC on<\/strong>.<\/p>\n<p>Replace measuring cup with simmering basket to reduce the gravy.
