This meant I had very little time for anything else in the morning, which meant that sitting down at the dining table to enjoy a healthy breakfast was a non-existent concept as our family was hurrying out the door to start the day.<\/p>\n<p>I came up with this recipe so that my husband and I could enjoy a healthy, savoury breakfast on the go. When prepared in advance (I would make this on a Sunday evening to last us until Thursday), it can help you avoid succumbing to the greasy, unfulfilling and expensive fast food breakfasts in the morning &#8211; simply reheat for less than a minute in the microwave. Having said all this, these frittatas are just as enjoyable when baked fresh and ready to consume straight away.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/dev.lalaskitchen.net\/wp-content\/uploads\/2013\/09\/cover.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-354 aligncenter\" alt=\"cover\" src=\"http:\/\/192.168.0.14\/\/wp-content\/uploads\/2013\/09\/cover-1024x680.jpg\" width=\"792\" height=\"526\" \/><\/a><\/p>\n<p style=\"text-align: left;\">Prep and Cooking Time &#8211;\u00a0<strong>25 minutes<\/strong> | Serves &#8211;\u00a0<strong>makes 8 portions<\/strong><\/p>\n<p style=\"text-align: left;\"><strong>INGREDIENTS<\/strong><\/p>\n<div>&#8211; 4 bacon rashers<\/div>\n<div>&#8211; 80g button mushrooms<\/div>\n<div>&#8211; 20g baby spinach leaves<\/div>\n<div>&#8211; 6 eggs<\/div>\n<div>&#8211; the egg whites of 2 eggs<\/div>\n<div>&#8211; extra virgin olive oil spray for greasing<\/div>\n<div>&#8211; salt and pepper for seasoning<\/div>\n<p style=\"text-align: left;\"><strong>METHOD<\/strong><\/p>\n<p style=\"text-align: left;\"><strong>Step 1.\u00a0<\/strong>Pre-heat oven to\u00a0180?C\u00a0and grease a muffin tray with extra virgin olive oil spray.<\/p>\n<p style=\"text-align: left;\"><strong>Step 2.\u00a0<\/strong>Dice bacon rashers and mushrooms, as well as finely chop spinach leaves and place in all in a bowl.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/dev.lalaskitchen.net\/wp-content\/uploads\/2013\/09\/KBD_6363.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-355 aligncenter\" alt=\"KBD_6363\" src=\"http:\/\/192.168.0.14\/\/wp-content\/uploads\/2013\/09\/KBD_6363-1024x680.jpg\" width=\"462\" height=\"307\" \/><\/a><\/p>\n<p style=\"text-align: left;\"><strong>Step 3.\u00a0<\/strong>Add all the eggs and egg whites into the bowl then season with salt and pepper in accordance to your taste prior to mixing all the ingredients together.
