I found this recipe in Thermomix&#8217;s <a href=\"http:\/\/www.thermomix.com.au\/products\/cook-books\/7032-everyday-cookbook.aspx\" target=\"_blank\" rel=\"noopener noreferrer\">Everyday Cookbook<\/a>\u00a0and thought to try it out one evening to please the dear husband who is a fan mousse. Just so you know how much of a fan he is, he has his own version of mousse, named &#8216;Extreme Mousse&#8217; which is essentially packet mousse with a ridiculous amount of sugar. *unhealthy!* \u00a0Anyway, with a lot less sugar and preservatives I made the mousse and left it to refrigerate and set overnight. Needless to say the husband was pleased and I was able to enjoy the mousse without my teeth hurting.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/dev.lalaskitchen.net\/wp-content\/uploads\/2013\/09\/ChocMousse_B.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-421 aligncenter\" alt=\"ChocMousse_B\" src=\"http:\/\/192.168.0.14\/\/wp-content\/uploads\/2013\/09\/ChocMousse_B-1024x680.jpg\" width=\"792\" height=\"526\" \/><\/a><\/p>\n<p style=\"text-align: left;\">Prep and Cooking Time &#8211; <strong>10 minutes + chilling time<\/strong> | Serves &#8211; <strong>6<\/strong><\/p>\n<p style=\"text-align: left;\"><strong>INGREDIENTS<\/strong><\/p>\n<p style=\"text-align: left;\">&#8211; 50g raw sugar<br \/>\n&#8211; 200g good quality chocolate (I used 50% Lindt 70% dark chocolate &amp; 50% Lindt milk chocolate)<br \/>\n&#8211; 200g full-fat pouring (whipping) cream<br \/>\n&#8211; 4 eggs, room temperature and separated<br \/>\n&#8211; a pinch of salt<\/p>\n<p style=\"text-align: left;\"><strong>METHOD<\/strong><\/p>\n<p style=\"text-align: left;\">Place sugar into mixing bowl and mill\u00a0<strong>10 sec \/ speed 9<\/strong>. Scrape down sides of bowl.<\/p>\n<p style=\"text-align: left;\">Add chocolate and grate <strong>10 sec \/ speed 6<\/strong>.<\/p>\n<p style=\"text-align: left;\">Add 50g of the cream and melt <strong>4 min \/ 50<strong>\u00b0C<\/strong>\u00a0\/ speed 2<\/strong><strong>.\u00a0<\/strong><\/p>\n<p style=\"text-align: left;\">Add egg yolks and mix <strong>15 sec \/ speed 4<\/strong>. Set aside and thoroughly clean and dry mixing bowl.<\/p>\n<p style=\"text-align: left;\"><strong>Insert Butterfly<\/strong>. Place remaining cream into mixing bowl and whip <strong>20 &#8211; 30 sec \/ speed 4<\/strong>, or until mixture thickens. Set aside. Thoroughly clean and dry mixing bowl.<\/p>\n<p style=\"text-align: left;\"><strong>Re-insert butterfly<\/strong>. Place egg whites and salt into mixing bowl and whip\u00a0<strong>3\u00bd\u00a0min \/ speed<\/strong> <strong>3.5 <\/strong>or<strong>\u00a0<\/strong>until still peaks form. Scrape down sides of bowl.\u00a0<strong>\u00a0<\/strong><\/p>\n<p style=\"text-align: left;\">Add reserved chocolate mixture and whipped cream and carefully fold\u00a0<strong>20 sec \/ \u00a0<img decoding=\"async\" title=\"counter-clockwise operation\" alt=\"counter-clockwise operation\" src=\"http:\/\/www.recipecommunity.com.au\/sites\/all\/modules\/contrib\/smileys\/packs\/thermomix\/counterclock.png\" \/>\u00a0\/ speed 3<\/strong>. Fold mixture using spatula until just combined.
