Fantastic with a cuppa and even great for the kids; you&#8217;d never guess this was a low fat recipe adapted from a Weight Watchers recipe!<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/dev.lalaskitchen.net\/wp-content\/uploads\/2014\/01\/gawker2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-613 aligncenter\" alt=\"gawker\" src=\"http:\/\/192.168.0.14\/\/wp-content\/uploads\/2014\/01\/gawker2-680x1024.jpg\" width=\"528\" height=\"794\" \/><\/a><\/p>\n<p style=\"text-align: left;\">Prep and Cooking Time\u00a0<strong>&#8211; 25 minutes\u00a0<\/strong>| Serves <span style=\"font-weight: 600;\">&#8211; makes 12 mini muffins<\/span><\/p>\n<p style=\"text-align: left;\"><strong>INGREDIENTS<\/strong><\/p>\n<div>&#8211; 80g butter, cubed<\/div>\n<div>&#8211; 4 egg whites (approximately 120g)<\/div>\n<div>&#8211; 1 teaspoon vanilla essence \/ extract<\/div>\n<div>&#8211; 130g almond meal<\/div>\n<div>&#8211; 3 Tablespoons self-raising flour<\/div>\n<div>&#8211; 90g caster sugar<\/div>\n<div>&#8211; Extra virgin olive oil spray for greasing<\/div>\n<p style=\"text-align: left;\"><strong>METHOD<\/strong><\/p>\n<p style=\"text-align: left;\">Preheat oven to\u00a0200\u00b0C and grease a 12 mini-muffin tray.<\/p>\n<p style=\"text-align: left;\">Melt butter in the TM bowl\u00a0<strong>40 sec \/ 50\u00b0C \/ speed 4.\u00a0<\/strong>Scrape the sides of the bowl.<\/p>\n<p style=\"text-align: left;\">Add egg whites and vanilla essence to the melted butter and mix\u00a0<strong>10 sec \/ speed 4<\/strong>. Scrape the sides of the bowl again.<\/p>\n<p style=\"text-align: left;\">Add almond meal, self-raising flour and caster sugar to the TM bowl and mix\u00a0<strong>10 sec \/ speed 5<\/strong>. Your mixture should have the consistency of thick pancake batter. If this is not the case, add a small egg white.<\/p>\n<p style=\"text-align: left;\">Spoon the mixture into your greased mini-muffin tray and bake for 15 minutes.
