Last year I gifted my colleagues red velvet cupcakes with cream cheese frosting for Valentines. This year even though I don&#8217;t work in an office, I thought I&#8217;d still keep the red velvet Valentine tradition but mix it up a bit with cheesecake. Normally I&#8217;m not a big fan of cheesecake but I must admit, this one is a little bit special.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/dev.lalaskitchen.net\/wp-content\/uploads\/2014\/02\/landscape1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-636 aligncenter\" alt=\"landscape\" src=\"http:\/\/192.168.0.14\/\/wp-content\/uploads\/2014\/02\/landscape1-1024x680.jpg\" width=\"792\" height=\"526\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>Prep and Cooking Time &#8211; <strong>40 minutes plus cooling time\u00a0<\/strong>|\u00a0Serves &#8211;\u00a0<strong>8 slices<\/strong><\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<div><em>For the Base&#8230;<\/em><\/div>\n<div>&#8211; 250g packet of Arnott&#8217;s Chocolate Ripple biscuits<\/div>\n<div>&#8211; 100g butter, cubed<\/div>\n<div><em>For the Filling\u2026<\/em><\/div>\n<div>\n<div>&#8211; 150g white sugar<\/div>\n<div>&#8211; 500g cream cheese, cubed<\/div>\n<div>&#8211; 60g sour cream<\/div>\n<div>&#8211; 2 Tablespoons cocoa powder<\/div>\n<div>&#8211; 2 eggs<\/div>\n<div>&#8211; 1 \u00bd teaspoon vanilla essence \/ extract<\/div>\n<div>&#8211; \u00bc teaspoon salt<\/div>\n<div>&#8211; 2 Tablespoon red food colouring<\/div>\n<\/div>\n<p>&nbsp;<\/p>\n<p><strong>METHOD<\/strong><\/p>\n<p><strong><\/strong>Preheat oven to 160<sup>o<\/sup>C and line a slice tray with baking paper.<\/p>\n<p>Melt butter <strong>40 sec \/ 50<sup>o<\/sup>C \/ speed 4<\/strong><\/p>\n<p>Add biscuits and combine with the butter <strong>15 sec \/ speed 8<\/strong>. Scrape the sides of the bowl. Lock the lid back into position and press turbo a couple of times to form crumbs for your base.\u00a0 Pour the biscuit crumbs into a slice tin and using the back of a spoon, press down the crumbs to distribute and form a smooth base.<\/p>\n<p>Bake base for 8 minutes and then remove from the oven to cool completely. DO NOT TURN OFF YOUR OVEN, instead increase the temp to 180<sup>o<\/sup>C<\/p>\n<p>Mill sugar <strong>10 sec \/ speed 9<\/strong> then scrape the sides of the bowl.<\/p>\n<p>Add cream cheese and sour cream and mix <strong>10 sec \/ speed 5<\/strong> then scrape the sides of the bowl.<\/p>\n<p>Add eggs, cocoa powder, vanilla essence and salt into the TM bowl and mix <strong>20 sec \/ speed 5<\/strong>. Scrape the sides of the bowl again.<\/p>\n<p>Add the red food colouring and continue to mix on <strong>speed 4<\/strong> until no colour streaks appear and everything is mixed together.<\/p>\n<p>Pour batter on top of prepared biscuit base and spread the filling out to create an even layer. Bake for 25 \u2013 30 minutes or until set. Allow to cool to room temperature before transferring to the fridge to cool completely.<\/p>\n<p>When ready to serve, carefully remove from its tin and slice into even pieces.
