After a bit of fine tuning, my Crispy Peking Duck with Chinese Vegetables in White Sauce is now ready for you to create and enjoy.<br \/>\n<a href=\"https:\/\/dev.lalaskitchen.net\/wp-content\/uploads\/2014\/03\/KBD_7431.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-665 aligncenter\" alt=\"KBD_7431\" src=\"http:\/\/192.168.0.14\/\/wp-content\/uploads\/2014\/03\/KBD_7431-1024x680.jpg\" width=\"792\" height=\"526\" \/><\/a><\/p>\n<p style=\"text-align: left;\">\n<p style=\"text-align: left;\">Prep and Cooking Time &#8211; <strong>35 minutes<\/strong> | Serves &#8211; <strong>2 (or 4; see notes below)<\/strong><\/p>\n<p style=\"text-align: left;\"><strong>INGREDIENTS<\/strong><\/p>\n<div>&#8211; 2cm piece of ginger<\/div>\n<div>&#8211; 2 garlic cloves<\/div>\n<div>&#8211; 1 Tablespoon TM vegetable stock concentrate<\/div>\n<div>&#8211; 40g soy sauce<\/div>\n<div>&#8211; 500g water<\/div>\n<div>&#8211; 2 pre-marinated Peking duck breasts, skin on<\/div>\n<div>&#8211; 2 carrots, peeled and sliced into thin discs<\/div>\n<div>&#8211; 2-3 heads of baby pak choy, roughly cut into pieces<\/div>\n<div>&#8211; 4-5 button mushrooms, sliced<\/div>\n<div>&#8211; 30g sesame oil<\/div>\n<div><em>For the White Sauce&#8230;<\/em><\/div>\n<div>&#8211;\u00a0\u00bd\u00a0teaspoon salt<\/div>\n<div>&#8211;\u00a0\u00bd\u00a0teaspoon fish sauce or to taste<\/div>\n<div>&#8211;\u00a0\u00bd\u00a0Tablespoon sugar<\/div>\n<div>&#8211;\u00a0\u00bd\u00a0Tablespoon corn starch<\/div>\n<div>&#8211;\u00a05 Tablespoons water<\/div>\n<div>&#8211;\u00a01 teaspoon Shaoxing wine<\/div>\n<p>&nbsp;<\/p>\n<p style=\"text-align: left;\"><strong>METHOD<\/strong><\/p>\n<p>Place ginger and garlic into the TM bowl and chop <strong>3 sec \/ speed 7<\/strong>.\u00a0 Transfer into a bowl and set aside. Do not clean the bowl.<\/p>\n<p>Add water, stock and soy sauce to the bowl and lock the lid in the position and remove MC.<\/p>\n<p>Score duck skin diagonally then place onto the Varoma bowl skin side down. \u00a0Set aside pre-marinated sauce for later use.<\/p>\n<p>Place sliced carrots on the Varoma tray then secure the lid on before placing the Varoma into position. Commence cooking <strong>9 min \/ Varoma \/ speed 1.<\/strong><\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/dev.lalaskitchen.net\/wp-content\/uploads\/2014\/03\/KBD_7412.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-674 aligncenter\" alt=\"KBD_7412\" src=\"http:\/\/192.168.0.14\/\/wp-content\/uploads\/2014\/03\/KBD_7412-1024x680.jpg\" width=\"462\" height=\"307\" \/><\/a><\/p>\n<p>Mix the white sauce ingredients in a bowl and set aside.<\/p>\n<p>Add pak choy vegetables on the Varoma tray on top of the carrots and continue cooking <strong>6 mins \/ Varoma \/ speed 1<\/strong>. \u00a0Once cooked keep vegetables aside, preferably warm.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/dev.lalaskitchen.net\/wp-content\/uploads\/2014\/03\/KBD_7417.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-675 aligncenter\" alt=\"KBD_7417\" src=\"http:\/\/192.168.0.14\/\/wp-content\/uploads\/2014\/03\/KBD_7417-1024x680.jpg\" width=\"462\" height=\"307\" \/><\/a><\/p>\n<p>**<strong>NOTE***\u00a0<\/strong>\u00a0If, like me, you prefer your vegetables really wilted, take this opportunity to further steam your vegetables to your liking while crisping the duck. Once you\u2019ve moved the duck to the frying pan as per the next step, transfer the uncooked pak choy vegetables into the Varoma bowl and steamed for a further <strong>2-<\/strong><strong>3 mins \/ Varoma \/ speed 1<\/strong>.<\/p>\n<p>Heat a small frying pan and fry the skin side of the duck in its pre-marinated sauce for approximately 4 minutes, or until skin is crispy and to your liking.\u00a0 Once cooked, leave duck breasts to rest skin side up.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/dev.lalaskitchen.net\/wp-content\/uploads\/2014\/03\/KBD_7422.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-676 aligncenter\" alt=\"KBD_7422\" src=\"http:\/\/192.168.0.14\/\/wp-content\/uploads\/2014\/03\/KBD_7422-1024x680.jpg\" width=\"462\" height=\"307\" \/><\/a><\/p>\n<p>Place sesame oil and reserved garlic and ginger into the TM bowl and heat <strong>1 min \/ 100<sup>o<\/sup>C \/ speed 1.<\/strong><\/p>\n<p>Add mushrooms and white sauce mix for <strong>5 min \/ 100<sup>o<\/sup>C \/ <img decoding=\"async\" title=\"counter-clockwise operation\" alt=\"counter-clockwise operation\" src=\"http:\/\/www.recipecommunity.com.au\/sites\/all\/modules\/contrib\/smileys\/packs\/thermomix\/counterclock.png\" \/>\u00a0\/ speed 1<\/strong>.<\/p>\n<p>Add greens and carrots and combine <strong>10 sec \/ reverse \/ speed 2.<\/strong><\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/dev.lalaskitchen.net\/wp-content\/uploads\/2014\/03\/KBD_7426.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-677 aligncenter\" alt=\"KBD_7426\" src=\"http:\/\/192.168.0.14\/\/wp-content\/uploads\/2014\/03\/KBD_7426-1024x680.jpg\" width=\"462\" height=\"307\" \/><\/a><\/p>\n<p>Slice duck and serve with vegetables immediately.<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/dev.lalaskitchen.net\/wp-content\/uploads\/2014\/03\/KBD_7437.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-678 aligncenter\" alt=\"KBD_7437\" src=\"http:\/\/192.168.0.14\/\/wp-content\/uploads\/2014\/03\/KBD_7437-1024x680.jpg\" width=\"772\" height=\"512\" \/><\/a><\/p>\n<p style=\"text-align: center;\">\n<p style=\"text-align: left;\"><strong>NOTES AND VARIATIONS<\/strong><\/p>\n<p>You can use any leafy green Asian vegetable of your choice if pak choy isn\u2019t your cup of tea (bok choy, kai lan comes to mind). You could also add any additional vegetables like snow peas and baby born; bear in mind you will need to adjust the steaming time according to how you like them cooked.<\/p>\n<p>Also, while I have noted that this recipe caters for two, you can increase that by adding more duck breasts (as many that can fit the Varoma bowl) and accompany with some beautifully cooked jasmine rice, as pictured above.
