I don&#8217;t know why it&#8217;s taken me so long to try a whole fish recipe in the Thermomix, after all I&#8217;ve cooked a full roast, a whole chicken and silverside in the Varoma. I came across this recipe while searching a whole snapper recipe and is by renowned celebrity chef Neil Perry (owner of the Rockpool restaurants at Crown Metropol in Perth and Melbourne). \u00a0This meal is perfect to enjoy between two or as part of a shared banquet amongst friends. It&#8217;s a classic Chinese dish that is simple to make but impressive to serve, especially when accompanied with vegetables and rice.<\/p>\n<p><a href=\"https:\/\/dev.lalaskitchen.net\/wp-content\/uploads\/2014\/04\/KBD_7516.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-725\" src=\"http:\/\/192.168.0.14\/\/wp-content\/uploads\/2014\/04\/KBD_7516-1024x680.jpg\" alt=\"KBD_7516\" width=\"792\" height=\"526\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>Prep and Cooking Time &#8211; <strong>30 minutes<\/strong> | Serves &#8211; <strong>4 to 6<\/strong><\/p>\n<p><span style=\"font-weight: 600;\">INGREDIENTS<\/span><\/p>\n<div>&#8211;\u00a0400 &#8211; 600g snapper (I used a 600g panfry snapper)<\/div>\n<div>&#8211;\u00a0Chinese cabbage leaves (I used baby Wombok)<\/div>\n<div>&#8211;\u00a03 spring onions, white section only and split into two<\/div>\n<div>&#8211;\u00a02-3 spring onions, white section only and\u00a0thinly sliced<\/div>\n<div>&#8211; 2 teaspoon sea salt<\/div>\n<div>&#8211; 30g ginger, sliced julienne<\/div>\n<div>&#8211; 800g boiling water<\/div>\n<div>&#8211; 50g peanut oil<\/div>\n<div>&#8211; 1 large handful of coriander leaves, for garnishing<\/div>\n<div><\/div>\n<div><em>For the Sauce&#8230;<\/em><\/div>\n<div>&#8211;\u00a0125g chicken liquid stock<\/div>\n<div>&#8211;\u00a02 Tablespoon light soy sauce<\/div>\n<div>&#8211;\u00a01 Tablespoon sesame oil<\/div>\n<div>&#8211; 1\u00a0Tablespoon Shaoxing wine (Chinese rice wine)<\/div>\n<div>&#8211; 1 Tablespoon white sugar<\/div>\n<div><\/div>\n<p>&nbsp;<\/p>\n<p><strong>METHOD<\/strong><\/p>\n<p>Put all the sauce ingredients into a small bowl and set aside.<\/p>\n<p><a href=\"https:\/\/dev.lalaskitchen.net\/wp-content\/uploads\/2014\/04\/KBD_7508.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-730\" src=\"http:\/\/192.168.0.14\/\/wp-content\/uploads\/2014\/04\/KBD_7508-1024x680.jpg\" alt=\"KBD_7508\" width=\"462\" height=\"307\" \/><\/a><\/p>\n<p>Line Varoma bowl with the cabbage leaves and split spring onions in the Varoma bowl, ensuring that a small opening is in the middle to allow steam to come through. Set aside.<\/p>\n<p><a href=\"https:\/\/dev.lalaskitchen.net\/wp-content\/uploads\/2014\/04\/KBD_7504.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-732\" src=\"http:\/\/192.168.0.14\/\/wp-content\/uploads\/2014\/04\/KBD_7504-1024x680.jpg\" alt=\"KBD_7504\" width=\"462\" height=\"307\" \/><\/a><\/p>\n<p>Pat the fish dry with a paper towel. With a sharp knife, make 3 diagonal cuts in the thickest park of the fish, then in the other direction to make a diamond pattern. Do the same on the other side of the fish.<\/p>\n<p>Rub the fish with salt and lay it on top of the split spring onions and cabbage leaves. Set aside.<\/p>\n<p><a href=\"https:\/\/dev.lalaskitchen.net\/wp-content\/uploads\/2014\/04\/KBD_7507.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-733\" src=\"http:\/\/192.168.0.14\/\/wp-content\/uploads\/2014\/04\/KBD_7507-1024x680.jpg\" alt=\"KBD_7507\" width=\"462\" height=\"307\" \/><\/a><\/p>\n<p>Fill TM bowl with boiling water and place Varoma bowl with fish on top. Pour the reserved sauce over the fish and top with ginger. Cook <strong>10-15 minutes \/ Varoma \/ speed 2<\/strong>.<\/p>\n<p><a href=\"https:\/\/dev.lalaskitchen.net\/wp-content\/uploads\/2014\/04\/KBD_7510.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-734\" src=\"http:\/\/192.168.0.14\/\/wp-content\/uploads\/2014\/04\/KBD_7510-1024x680.jpg\" alt=\"KBD_7510\" width=\"462\" height=\"307\" \/><\/a><\/p>\n<p>Once cooked, transfer the fish and ginger onto a platter and scatter the fish with the julienned spring onions. Reserve 150g of the steamed fish juice from the TM bowl and pour on top of the fish. Disregard the remaining juice.<\/p>\n<p>Place peanut oil into the TM bowl and cook <strong>1 minute \/ 100<sup>o<\/sup>C \/ speed 1<\/strong>.
