I LOVE mangoes and they are such a delicious, versatile fruit &#8211; I love them in salads with prawns as well as for dessert, in ice-cream, cheesecakes or on their own.<\/p>\n<p>I came across this recipe as a possible Christmas dessert idea. It&#8217;s light and a little bit different to the standard pavlova for Christmas dessert. Plus, if this year&#8217;s Christmas is going to be a scorcher like previous years, then this would make such a refreshing dessert when chilled. The biggest draw card for me about this recipe is though, is the fact that I can make it ahead of time so there&#8217;s no need to rush on the day to make dessert &#8211; I can have it sorted the day before. Personally though,\u00a0I can totally see this dessert being an all year thing \ud83d\ude09<\/p>\n<p><a href=\"https:\/\/dev.lalaskitchen.net\/wp-content\/uploads\/2014\/11\/brand.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-845 size-full\" src=\"https:\/\/dev.lalaskitchen.net\/wp-content\/uploads\/2014\/11\/brand.jpg\" alt=\"brand\" width=\"4288\" height=\"2848\" \/><\/a><\/p>\n<p>Prep and Cooking Time &#8211; <strong>15 minutes + chilling time<\/strong> | Serves &#8211; <strong>4 to 6<\/strong><\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<div>&#8211;\u00a01 teaspoon gelatin powder<\/div>\n<div>&#8211;\u00a040g boiling water<\/div>\n<div>&#8211;\u00a060-100g raw sugar (optional, adjust to taste)<\/div>\n<div>&#8211; 250g mango flesh, plus additional flesh to garnish<\/div>\n<div>&#8211; 250g whipping pouring cream<\/div>\n<div>&#8211; pinch of salt<\/div>\n<div>&#8211;\u00a03 egg whites (approx. 85g)<\/div>\n<p>&nbsp;<\/p>\n<p><strong>METHOD<\/strong><\/p>\n<p>Add raw sugar to the mixing bowl and mill\u00a0<strong>10 sec \/ speed 9<\/strong>. Scrape the sides of the bowl.<\/p>\n<p>Place boiling water into a separate small bowl and add the gelatin powder. Stir until dissolved.<\/p>\n<p>Add mango flesh and dissolved gelatin into the TM bowl and puree <strong>30 sec \/ speed 8<\/strong>.\u00a0\u00a0Empty TM bowl and set puree aside. Clean TM bowl and dry.<\/p>\n<p><strong>Insert butterfly<\/strong>. Add whipping cream into the mixing bowl and whip\u00a0<strong>10-30 sec \/ speed 4\u00a0<\/strong>or until thickened.<\/p>\n<p><strong>Remove butterfly.<\/strong> Empty TM bowl and set whipped cream aside. Clean TM bowl and dry.<strong>\u00a0<\/strong><\/p>\n<p><strong>Insert<\/strong> <strong>butterfly<\/strong>. Place egg whites and salt into the mixing bowl and whip <strong>3\u00bd min \/ speed 3.5<\/strong>, or until stiff peaks form.\u00a0<strong>\u00a0<\/strong><\/p>\n<p>Add reserved mango puree and whipped cream to the TM bowl and combine\u00a0<strong>20 sec \/\u00a0<img decoding=\"async\" title=\"counter-clockwise operation\" src=\"http:\/\/www.recipecommunity.com.au\/sites\/all\/modules\/contrib\/smileys\/packs\/thermomix\/counterclock.png\" alt=\"counter-clockwise operation\" \/>\u00a0\/ speed 3.<\/strong><\/p>\n<p>Pour mousse into individual portion cups\u00a0and leave in the fridge to chill and set.
