What&#8217;s a Cronut you ask? It&#8217;s a donut with the awesome crispy layers of a croissant. My motivation to make these? They are rare to find (in Perth) and they can cost anywhere between $5 to $10 EACH! When I made a batch, it made at least 6\u00a0Cronuts and cost way less than what 6\u00a0Cronuts would cost at the shops.<\/p>\n<p>The original Cronut recipe is so technical and precise it reads more like a science experiment than a recipe! Making Cronuts is really finicky and no two batches are the same unless you can replicate the same temperatures. Many pastry lovers who have attempted to make Cronuts at home have written that it was too hard and that they were not successful at first attempt\u00a0so please be mentally prepared for this to happen. Temperature in proving, folding techniques and\u00a0rest times are very important with this recipe; it is probably why it takes as long as it does and why it costs a lot to buy at the bakery.<\/p>\n<p>I debated whether to share this recipe: I wanted to share it because I know it works but at the same time, I also didn&#8217;t want to share it because it may not always work as so many factors influence its success. So for this reason\u00a0<span style=\"text-decoration: underline;\">I cannot always guarantee the perfect Cronut when using\u00a0this recipe.<\/span>\u00a0However if you&#8217;re like me, despite all the suggestions to not bother trying, I still tried anyway and I loved the feeling of satisfaction when I got it right (even if it took me so many times); crispy, buttery and flakey home-made Cronuts.<\/p>\n<p>I have provided as much notes as I can for this recipe to be successful for you. I would recommend reading the recipe and notes in its entirety before commencing.\u00a0Now I am no pastry chef by any means but I think these Cronuts taste great for something home-made. Good luck in making it \ud83d\ude42<\/p>\n<p><a href=\"https:\/\/dev.lalaskitchen.net\/wp-content\/uploads\/2015\/03\/fg.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-981 size-large\" src=\"http:\/\/www.mylalalife.com\/wp-content\/uploads\/2015\/03\/fg-1024x680.jpg\" alt=\"fg\" width=\"900\" height=\"598\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p><strong>Prep and Cooking Time &#8211; 2 days | Serves &#8211; 8-10 Cronuts<\/strong><\/p>\n<p><strong>INGREDIENTS\u00a0<\/strong><\/p>\n<div>&#8211;\u00a0125g plain flour + extra for dusting<\/div>\n<div>&#8211;\u00a0125g baker&#8217;s flour<\/div>\n<div>&#8211; 1\/2\u00a0teaspoon\u00a0salt<\/div>\n<div>&#8211;\u00a030g caster sugar<\/div>\n<div>&#8211;\u00a0150g very cold butter, cubed (minimum 2cm cubed)<\/div>\n<div>&#8211;\u00a065g milk<\/div>\n<div>&#8211;\u00a060g water<\/div>\n<div>&#8211;\u00a02 teaspoon dried yeast<\/div>\n<div>&#8211; canola or grapeseed oil for frying<\/div>\n<div>&#8211;\u00a0vanilla sugar for dusting<\/div>\n<p>&nbsp;<\/p>\n<p><strong>EQUIPMENT<\/strong><\/p>\n<div>&#8211;\u00a0Donut cutters<\/div>\n<div>&#8211;\u00a0Glad Wrap\u00a0cling wrap<\/div>\n<p>&nbsp;<\/p>\n<p><strong>METHOD<\/strong><\/p>\n<p>Add flour, sugar, salt and butter into TM bowl. Pulse\u00a0<strong>0.5 secs \/ Turbo<\/strong> two times. You want to see chunks of butter in this mixture. Set aside and clean TM bowl.<\/p>\n<p><a href=\"https:\/\/dev.lalaskitchen.net\/wp-content\/uploads\/2015\/03\/KBD_8618.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-989\" src=\"http:\/\/www.mylalalife.com\/wp-content\/uploads\/2015\/03\/KBD_8618-1024x680.jpg\" alt=\"KBD_8618\" width=\"600\" height=\"399\" \/><\/a><\/p>\n<p>Add milk, water and yeast into TM bowl and mix\u00a0<strong>2 mins \/ 37oC \/ speed 2<\/strong>. When finish, mix a further\u00a0<strong>3 sec \/ speed 3.\u00a0<\/strong><\/p>\n<p>Return reserved flour and butter mixture and combine with the yeast\u00a0<strong>8\u00a0sec \/\u00a0<img decoding=\"async\" title=\"counter-clockwise operation\" src=\"http:\/\/www.recipecommunity.com.au\/sites\/all\/modules\/contrib\/smileys\/packs\/thermomix\/counterclock.png\" alt=\"counter-clockwise operation\" \/> \/ speed 2<\/strong>. Empty out the dough and very quickly work it into a ball.\u00a0Leave the dough in a bowl and let it sit in the fridge (uncovered) for 2 hours for the butter to harden.<\/p>\n<p><a href=\"https:\/\/dev.lalaskitchen.net\/wp-content\/uploads\/2015\/03\/KBD_8624.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-991\" src=\"http:\/\/www.mylalalife.com\/wp-content\/uploads\/2015\/03\/KBD_8624-1024x680.jpg\" alt=\"KBD_8624\" width=\"600\" height=\"399\" \/><\/a><\/p>\n<p>Roll out the rested dough on a floured surface. Seeing chunks of butter in the dough is a good sign! You want to roll your dough out to the size of an A4 paper of about 1cm thickness. As you reach this size, fold the dough into thirds (like a pamphlet), roll out the dough into the size of an A4 paper again and repeat the folding \/ rolling process. You may need to continue dusting your dough with flour in between\u00a0folding if it starts to become sticky.\u00a0This is the layering stage\u00a0so the more times you do this, the more chances of layers; I did this process around 6-8 \u00a0times.<\/p>\n<p><a href=\"https:\/\/dev.lalaskitchen.net\/wp-content\/uploads\/2015\/03\/KBD_8625.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-992 size-medium\" src=\"http:\/\/www.mylalalife.com\/wp-content\/uploads\/2015\/03\/KBD_8625-300x199.jpg\" alt=\"KBD_8625\" width=\"300\" height=\"199\" \/><\/a><a href=\"https:\/\/dev.lalaskitchen.net\/wp-content\/uploads\/2015\/03\/KBD_8629.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-993 size-medium\" src=\"http:\/\/www.mylalalife.com\/wp-content\/uploads\/2015\/03\/KBD_8629-300x199.jpg\" alt=\"KBD_8629\" width=\"300\" height=\"199\" \/><\/a> <a href=\"https:\/\/dev.lalaskitchen.net\/wp-content\/uploads\/2015\/03\/KBD_8630.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-994 size-medium\" src=\"http:\/\/www.mylalalife.com\/wp-content\/uploads\/2015\/03\/KBD_8630-300x199.jpg\" alt=\"KBD_8630\" width=\"300\" height=\"199\" \/><\/a><\/p>\n<p>Do one last fold then cover the dough in cling wrap and leave in the fridge to rest overnight (absolute minimum 5 hours).<\/p>\n<p><a href=\"https:\/\/dev.lalaskitchen.net\/wp-content\/uploads\/2015\/03\/KBD_8633.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-996\" src=\"http:\/\/www.mylalalife.com\/wp-content\/uploads\/2015\/03\/KBD_8633-1024x680.jpg\" alt=\"KBD_8633\" width=\"600\" height=\"399\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>Take out your rested dough and leave on the kitchen bench to continue resting for half an hour at room temperature. Proceed to roll out your rested dough once more to a thickness of no less than 1cm. Use your donut cutter to shape your Cronuts.<\/p>\n<p><a href=\"https:\/\/dev.lalaskitchen.net\/wp-content\/uploads\/2015\/03\/KBD_8634.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-998\" src=\"http:\/\/www.mylalalife.com\/wp-content\/uploads\/2015\/03\/KBD_8634-1024x680.jpg\" alt=\"KBD_8634\" width=\"600\" height=\"399\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>Lay your cut out Conuts onto a floured tray and leave to rise again for at least another hour. If you have an oven that proves dough at 40oC this would be ideal. The Cronuts only need to rise slightly as they will puff when being fried.<\/p>\n<p><a href=\"https:\/\/dev.lalaskitchen.net\/wp-content\/uploads\/2015\/03\/KBD_8636.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-999\" src=\"http:\/\/www.mylalalife.com\/wp-content\/uploads\/2015\/03\/KBD_8636-1024x680.jpg\" alt=\"KBD_8636\" width=\"600\" height=\"399\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>After resting your Cronuts, warm up a few centimetres\u00a0of oil in a frying pan on medium heat. If you have a thermometer, the ideal temperature of your oil should be 170oC. Fry Cronuts on each side until puffed up and golden brown (approximately 2 minutes) before flipping over and cooking the other side. When done, transfer onto a kitchen tea towel and dust with vanilla sugar.<\/p>\n<p><a href=\"https:\/\/dev.lalaskitchen.net\/wp-content\/uploads\/2015\/03\/KBD_8640.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-1000\" src=\"http:\/\/www.mylalalife.com\/wp-content\/uploads\/2015\/03\/KBD_8640-1024x680.jpg\" alt=\"KBD_8640\" width=\"600\" height=\"399\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>Leave your Cronuts to continue to\u00a0drain any excess oils. Once cooled, you can fill your Cronuts with your desired filling (Vanilla custard comes to mind) before glazing it with your chosen icing. Enjoy!<\/p>\n<p><a href=\"https:\/\/dev.lalaskitchen.net\/wp-content\/uploads\/2015\/03\/KBD_8644.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-1002\" src=\"http:\/\/www.mylalalife.com\/wp-content\/uploads\/2015\/03\/KBD_8644-683x1024.jpg\" alt=\"KBD_8644\" width=\"683\" height=\"1024\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p><strong>NOTES AND VARIATIONS<\/strong><\/p>\n<p>It is important to ensure the\u00a0cubed butter in your ingredients list is not\u00a0cut up too small; you need chunky blocks of butter in your dough.\u00a0Throughout the process, you need to try and keep those chunks of butter in tact within the dough.\u00a0When it comes to proving your Cronut dough, you need to ensure they prove in an area where the dough can relax and rise, but not be too hot to melt your butter chunks.<\/p>\n<p>I have not substituted either flour for anything else so I am not sure what would happen if these changed.<\/p>\n<p>I glazed my Cronuts with Sarah Wong&#8217;s <a href=\"http:\/\/www.recipecommunity.com.au\/sauces-dips-spreads-recipes\/salted-caramel-sauce\/24475\">Salted Caramel Sauce<\/a>.<\/p>\n<p><em>* Recipe inspired and converted from SORTEDfood&#8217;s &#8216;<a href=\"https:\/\/sortedfood.com\/recipe=2558\">How To Make Cronuts<\/a>&#8216; recipe *<\/em><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>So the other day, I made Cronuts.
