Quick Creamy Pasta

If you are after a quick and simple meal that takes less than 20 minutes (if not quicker) to cook from start to finish, then look no further than this recipe. Even though it’s super quick to make, it’s flavoursome and wholesome. Best of all, it’s really easy and economical to make.

Prep and Cooking Time – 10 minutes |  Servings – 4 to 6

INGREDIENTS

– 500g packet of fettuccine, or pasta of choice
– 70g semi sun-dried tomatoes, drained of oil
– 30g fresh spinach leaves
– 2 garlic cloves
– 500g milk
– 20g plain flour
– 30g butter
– 100g grated tasty cheese
– 1 teaspoon traditional Dijon mustard
– 1 teaspoon ground paprika
– salt and pepper to taste
– Parmesan cheese, as desired for toppping

METHOD

Cook pasta according to packet instructions.

While the pasta is cooking, place semi sun-dried tomatoes, spinach leaves and garlic cloves into the TM bowl and chop 5 sec / speed 5. Scrape down the bowl.

Add the remaining ingredients, except the Parmesan cheese, and cook 7 mins / 90 degrees / speed 4.

Pour sauce over freshly cooked and drained pasta. Top with Parmesan cheese then serve and enjoy immediately.

NOTES AND VARIATIONS

This recipe is great if you are following meat-free Mondays. My family enjoys this pasta sauce with tortellini.

If you are wanting to bulk up or turn this into a fancy meal, I strongly recommend adding cooked pulled beef or pan-fried marinara mix.

In blogging this recipe, I drew inspiration from Thermomixing for Eight blogger and Thermomix consultant Chenoa Trama.
