Cafe Style Banana Bread
I cannot think of a person that I know who doesn’t love a good banana bread, especially the beautifully dense ones you buy at the cafes. I love a good banana bread such as this one to accompany my morning coffee for breakfast or with my tea in the afternoon. While the original recipe is made in the Thermomix, I have converted it here for those who wish to make it the traditional way. This bread is best eaten fresh or grilled with melted butter on top and be warned – you will have to share with the little ones as they love it too.
Prep and Cooking Time – 60 minutes | Serves – 6 adults

METHOD
Step 1. Pre-heat oven to 200?C and line a loaf tray with baking paper.
Step 2. Place all dry ingredients into a bowl and mix together well – almond meal, flour, sugars, and bicarbonate soda.
Step 3. Add the remaining ingredients into a bowl and stir well, ensuring there are no lumps – eggs, butter, banana, syrup and vanilla extract.
Step 4. Pour banana bread batter into lined loaf tray and bake in the oven for 50 minutes. Serve as soon as it is ready.
NOTES AND VARIATIONS
The oven I used when making this bread was not fan-forced so please adjust your ovens accordingly if you have one . Even then, I like to check the bread at the 45 minute mark by sticking a fork into the bread; if no batter comes out with the fork then you will know your bread has been cooked on the inside.
