Almond Chia Pudding

In my quest for healthy eating, I have turned away many healthy recipes as it sometimes contains some very exotic ingredients which are too hard for me to source and/or out of my budget. So I was quite intrigued to find this chia pudding recipe in a Facebook forum that focused on healthy eating – not only did the recipe include accessible ingredients, but it looked so simple and quick to make.  As it gets soaked and cooked in the milk, the chia seeds turn into a tapioca-like consistency and I think this pudding would totally hit the spot for someone who is after a sweet treat that’s easy on the hips.

Prep and Cooking Time – 10 minutes | Serves – 6

INGREDIENTS

– 100g raw almonds
– 550g water
– 85g chia seeds
– 2 Tablespoon raw honey
– 1 teaspoon vanilla essence
– seasonal fruit to garnish (such as strawberries, banana, mango, mixed berries)

METHOD

Place all the almonds into the TM bowl and grind 20 sec / speed 9. 

Add water and blend with the almonds 1 min / speed 9.

Add the remaining ingredients, except the fruit, into the TM bowl and cook 5 min / 37oC / counter-clockwise operation / speed 2.

Pour pudding into bowls or mugs and top with chosen seasonal fruit.
