Honeycomb and Choc Chip Muffins
After taking ownership of my new TM6, the first thing I made was Honeycomb. It made so much that I didn’t know what to do with it all! Despite eating some, turning them into chocolate bars and even gifting them – there was still more! So I trawled through the Thermomix Facebook cooking groups and Loving My Cook Key & Cookidoo member Yve Stokes came up with the genius idea of using putting excess honeycomb into muffins.
Prep and Cooking Time – 25 minutes | Serves – 12 muffins
INGREDIENTS
– 250g plain flour
– 70g sugar
– 1 teaspoon bicarb soda
– 1 teaspoon baking powder
– 1/4 teaspoon salt
– 100g butter
– 1 egg
– 180g milk
– 80g honeycomb, crushed into small pieces
– 50g dark chocolate chips
METHOD
Preheat oven to 200oC. Grease muffin pan or insert cupcake cases.
Add all ingredients, except for the honeycomb and choc chips, and mix 30 sec / speed 6
Add the honeycomb and choc chips then mix in 10 sec / reverse / speed 4
Pour mixture into the muffin pan or cases up to 3/4 full. Bake for 15-20 minutes or until a skewer comes out clean from the muffin.
Leave to cool on a wire rack before enjoying.
